Black Bean Salad

Ingredients

  • 1 (15.5 oz.) can black beans
  • 1 (11 oz.) can corn
  • 0.5 cup red bell peppers, diced
  • 4 tablespoons cilantro, chopped
  • 3 tablespoons rice vinegar
  • lettuce, to serve

Instructions

Drain and rinse the black beans and corn.

Chop tomato and cilantro and bell pepper.

Mix together - sprinkle seasoned vinegar to taste over all and serve on a bed of shredded lettuce.
