Curry Chicken with Cashews

Ingredients

  • chicken meat (dark and white), as needed to fill pan
  • 1 can cream of chicken soup
  • .875 cup mayonnaise
  • curry powder, to taste
  • cashews, to taste
  • tri-colored peppers, thinly sliced

Instructions

Cut the chicken into large pieces. Place in casserole.

In bowl mix together 1 or 2 cans of cream of chicken soup, and half that amount of mayonnaise. Add curry power. Spoon over chicken.

Cover with foil and back at 350 for 1 hour.

After 1/2 hr. sprinkle cashews over and stir in.

I also use thinly sliced peppers of different colors ( yellow, red, green) instead of cashews and mix in with the chicken and sprinkle some on top for color.

Notes

  1. The amount of chicken will vary based on the size of pan you are uisng. Adjust the the amount of soup and mayonnaise accordingly.
