Taco Soup

Ingredients

  • 1 lb very lean ground beef
  • 1 medium onion, diced
  • 1 pkg Taco seasoning mix
  • 1 can Ranch style beans
  • 1 can pinto beans, (with jalapeƱos, if preferred)
  • 1.5 cups water
  • 1 can tomatoes with green chilies
  • 1 can diced tomatoes, (I like the petite diced tomatoes)
  • 1 can whole kernel corn, (do not drain)
  • 1 can hominy
  • Salt, to taste

Instructions

Combine the ground beef and onion; sauté until beef is browned and onions are tender. Add taco seasoning and water.

In a large stockpot, combine the beef mixture and remainder of ingredients. Simmer over low heat for about 1-1/2 hours. (I combined all into a crock pot and cooked on low for about 6 hours)

Notes

  1. I used 2 cans Luck pinto beans and removed the pork chunk, then omitted the Ranch style beans
