Broccoli and Cauliflower Casserole

Total time: 40 minutes

Ingredients

  • 0.5 cup rice, uncooked
  • 10 oz broccoli florets
  • 10 oz cauliflower florets
  • 0.5 cup butter
  • 1 onion, chopped
  • 1 lb processed cheese cubes
  • 1 can cream of chicken soup
  • 5.375 oz milk
  • 1.5 cups buttery crackers, crushed

Instructions

In a saucepan bring water to a boil.

Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Drain and set aside.

Simmer broccoli and cauliflower in water for 10 mins. Preheat over to 350.

In a larger saucepan, melt butter and sauté onion.

Stir broccoli and cauliflower and rice into saucepan.

Stir in cheese,chicken soup and milk.

Transfer mixture into casserole dish and sprinkle with crackers.

Bake in oven for 30 mins.
