Chili con Carne

Ingredients

  • 0.5 pound lean boneless pork
  • 1 tablespoon olive oil
  • 1 pound ground lean beef
  • 3 cups onions, finely chopped
  • 2 tablespoons garlic, finely minced
  • 3 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 tablespoon oregano, dried, crumbled
  • 1 bay leaf
  • 0.5 teaspoon hot red pepper flakes, or to taste
  • salt, to taste
  • pepper, to taste
  • 3 cups tomatoes, imported canned
  • 3 teaspoons tomato paste
  • 2 cups beef broth, fresh or canned
  • 0.25 cup cilantro, chopped, optional

Instructions

Cut pork into quarter-inch cubes.

Heat oil in kettle and add pork and beef. Cook, stirring and chopping down with side of heavy metal kitchen spoon to break up lumps. Cook until meat loses raw look.

Add onion and garlic and cook, stirring, about three minutes.

Add remaining ingredients except cilantro. Bring to boil and let simmer 30 to 45 minutes.

Stir in cilantro.
