Irish Soda Bread

Ingredients

  • 4 cups flour
  • 1.25 teaspoons baking soda
  • 2 cups sour milk
  • 1 teaspoon salt
  • 0.5 cup sugar
  • 1 cup raisins
  • 1.5 tablespoons Crisco

Instructions

Preheat oven to 400 degrees.

In a large bowl, sift together the flour, salt, sugar, and baking soda.

Add in the Crisco and mix until well incorporated.

Add in the raisins and sour milk and mix until just combined. Do not overmix.

Pour the batter into a well-greased and floured 8x2 inch loaf pan.

Bake for approximately ¾ hour, or until a toothpick inserted into the center comes out clean.

Let cool completely on a wire rack before slicing.

Notes

  1. Add 3 Tbsp. White vinegar to each cup of milk to sour, let sit to curdle.

  2. The dough will be moist like a heavy cake mixture. Do not knead it. Put into the pan with a spatula , gently pat top of dough with floured hands to even the dough in the pan.

  3. Makes 1 loaf in a 8 inch by 2 inch pan
