
Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
In a medium bowl, cream together the sugar, brown sugar, and butter until light and fluffy. Beat in the egg and peanut butter until well blended.
In a separate bowl, whisk together the flour, salt, baking soda, and vanilla. Add the dry ingredients to the wet ingredients and mix until well combined. Roll the dough into small balls and place them on the prepared baking sheet. Flatten the balls slightly with a fork.
Bake for 7-8 minutes, or until the edges are golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
