Strawberry, Goat Cheese & Arugula Salad

Ingredients

    Salad
  • 5 oz arugula
  • 0.5 pint strawberries, washed and sliced
  • 2 oz goat cheese, crumbled
  • 2 tablespoons nuts, optional
  • Lemon Vinaigrette
  • 2 lemons, juice squeezed
  • 2 Tbsp raw honey
  • 1 tsp Dijon mustard
  • 0.25 cup extra virgin olive oil
  • salt, generous pinch

Instructions

Salad

Place greens in a large bowl.

Top with remaining ingredients and a tiny pinch of salt & pepper.

Drizzle with desired amount of dressing and toss before serving.

Lemon Vinaigrette

In a medium bowl, whisk together all ingredients. Season to taste with salt and pepper.

Store any leftover dressing in the fridge for up to a week
